I'm not aware of any survey that has focused on consumer trust around traceability.  Regarding your second question, I believe consumers will learn about traceability directly from the food manufacturers and retailers.  These companies will start to promote their use of traceability practices as a way to gain a competitive advantage.  Some already do this is on their Web sites and in other "softer" ways, but I can see a day when it will be part their broader marketing activities.
